I am a genius!

Remember I mentioned a few posts back that I farted around with some recipes and made them low calorie?  Well I did even better with my bran muffins.  I tweaked the recipe again, counting up the calories as I went along, and I’ll be damned, the muffins turned out good!  Yay me!  I’ll even share the recipe.  That’s how nice I am.

Preheat oven to 375 degrees.  Combine  2 cups 2% milk with 2 tbsp lemon juice, mix in with 3 cups bran and let stand.  In another bowl mix 3 eggs with 1/2 cup brown sugar,  1/4 cup olive oil and 2 tsp vanilla.  Add to bran mixture.  In a separate bowl, combine 1 1/2 cups whole wheat flour with 2 tsp baking soda, 2 tsp baking powder, 1 tsp salt, and 1/2 cup raisins.  Mix all together until moistened.  I used jumbo silicone muffin pans (the bonus to those is that you don’t have to grease them, adding extra calories), and this recipe made 12, and each muffin is only 210 calories.  Perfect for a snack.

Did anybody besides me giggle at the “jumbo silicone” part of the recipe?  Good, I’m not the only one 🙂

These muffins are yummy and filling.  The good news is, you can tweak the recipe even more, using skim milk, less eggs and no sugar at all (if you can stand it!)

So as you can probably tell, I am still on track, with no signs of slowing down.

  1. lol.. woo hoo genius girl… I like the silicone baking stuff but I don’t own any at the moment.. I’ll admit that I have a little fear that it’s all some elaborate joke to trick me into plastic in the oven 😀
